This pesto can be used as a dressing on your favourite salad, as a simple dip or try stirring it through some whole grain pasta for a quick and easy meal. The garlic used is great for keeping away bugs and colds (not to mention the vampires!) and the nuts and oil are a great source of those essential fatty acids.
Ingredients:
- Basil
- Unroasted nuts (brazil/pine nuts)
- 3-5 cloves of fresh, shelled garlic
- Good quality olive oil
- Salt and pepper to taste
- Parmesian or romano cheese (optional)
To prepare:
Finely chop or blend all of the dry ingredients into a food processor, until the consistency is mixed and cut, but with a few “chunky” bits left in. Add enough oil to make a smooth consistency.
